Hario Jumping Tea Pot
Jumping is the movement of tea leaves floating up and down, catching the flow of air in hot water. Jumping allows the tea leaves to slowly unravel and extract aromas and flavour from the leaves. The key to get the leaves jumping is a water temperature of about 95°C, which has just the right amount of air to move around the tea leaves. Once the leaves settle back to the bottom of the pot, the tea is ready to serve.
